chicken pot pie pockets

So the hot pockets turned out great right out of the oven and I had one for lunch today that had been in the freezer over night, it warmed up just fine in the microwave.

Today I think I will make chicken pot pie pockets using the same dough. The filling is really simple. cooked cubed chicken, frozen veggies, a can of cream of chicken soup. You could even make it simpler by using canned chicken.

PIzza

We love pizza. I have been using this simple no yeast recipe to make it at home. (cheaper and healthier)

2 1/2 c. flour
2 3/4 tsp. baking powder (if using baking soda use half and omit salt)
1 tsp. salt
1 tbsp. oil
3/4 to 1 c. water
 
Mix dry ingredients. add 3/4 cup water and oil. Stir until it forms a ball. If dough is stiff, add more water.The dough will be soft, not sticky. Knead on a floured surface for 3-4 minutes.
Bake at 400°F for 15-25 minutes.

 We also love quick warm up snack. When you by them at the store they are filled with preservatives and other not so great stuff. Today Ty had me pick up some hot pockets for am extra snack at work. I was thinking I can make these at home... I looked at a few blogs where other people have done it! I'm not sure if my recipe is freezer friendly but I am going to find out tomorrow.
